Cozy Shepherd’s Pie

Makes 4 servings – Cals 406 | P 32g | C 36g | F 16g (per serving)

INGREDIENTS

Bottom Layer
  • 1 pound ground beef or turkey
  • 1 yellow onion, diced
  • 1 cup carrot, diced
  • 1 cup peas
  • 2 tbsp oil
  • 3 tbsp flour
  • 1 tbsp thyme
  • 2 cloves garlic, minced
  • 1 cup beef stock
  • salt and pepper, as needed
  • 2 tsp Worcestershire sauce
Top Layer
  • 2 russet potatoes
  • 2 tbsp milk
  • 3 tbsp nutritional yeast (or parmesan cheese)
  • 1/4 tsp garlic powder
  • salt and pepper, as needed

 

DIRECTIONS

  1. In a large frying pan, heat oil over medium-high heat and brown ground turkey or ground beef. Meanwhile, boil carrots until soft.
  2. Reduce heat to medium. Add onion, carrots, and peas to frying pan. Cover and cook for 5 minutes.
  3. Add thyme, garlic, salt, pepper, beef stock, Worcestershire sauce, and flour. Simmer uncovered for 10 minutes or until mixture thickens.
  4. While the meat mixture simmers, prepare the potato topping. Boil potatoes until soft through.
  5. In a large bowl, mash potatoes until all large lumps are gone. Add milk, nutritional yeast, garlic powder, salt, and pepper. Mix until well combined.
  6. Transfer meat and veggie mixture to a casserole dish. Top with mashed potatoes and spread evenly.
  7. Bake at 350 F until potatoes are golden brown.
